Bouchon (The Thomas Keller Library), by Thomas Keller

Amazon.com Review

Bouchon, chef Thomas Keller's bistro cookbook, offers 180-plus recipes from his eponymous restaurants--there are two. Readers perusing the near-prosciutto-size book will be dazzled, first, by its great looks (there are many beautiful photos), then, perhaps, wonder why so many of its typically homey bistro dishes are so fussy to prepare. Why, for example, must the onions for onion soup be caramelized for five hours, or the muscles of a leg of lamb separated so that each can be cooked to an exact, presumably optimal, temperature. They should, however, trust this justly celebrated chef, whose sometimes-painstaking refinements reflect a better way. Apart from the excellence of the dishes, the reason to own Bouchon is to discover the richness of Keller's technical understanding. Readers learn, for example, not to baste chicken while it roasts, which creates skin-softening moisture, and to allow the base for crème caramel to sit before baking, thus permitting its flavors to deepen. Keller's sensitivity to ingredients and their composition is profound; and he and his collaborators have presented it so deftly that one finds oneself engrossed again and again. Whether Keller is talking about vinaigrettes (in their balance of fat, acid, and saltines, the perfect sauce) vegetable glazing, or the creation of brown butter, his insights are fascinating. The dishes cover a wide range of courses, and include the traditional--poule au pot, veal roast, pommes frites, and so on--and the "new," such as Gnocchi with Summer Vegetables, Skate with Fennel-Onion Confit and Tapenade Sauce, and Grandma Sheila's Cheesecake Tart with Huckleberries. All are, as the French might say, impeccable--and can be accomplished by anyone willing to take the time to do so. Like his cooking, Bouchon is a sui generis treat. --Arthur Boehm

From Publishers Weekly

Keller's restaurant Bouchon, in Napa Valley, Calif., is modeled after Parisian bistros and serves simple yet sumptuous fare. This graceful ode to bistro cooking emphasizes that although in America, "bistro" is synonymous with "casual," the food is prepared with "precision of technique brought to bear on ordinary ingredients." Close-up photos of signature dishes are alluring, and several action shots of food preparation may help readers refine their techniques. The book's sections progress from "First Impressions" (hors d'oeuvres and more) to "Anytime" dishes (soups, salads, quiches) to appetizers, entrées and desserts. Thoughtful introductions to each recipe grouping explain Keller's experiences with the featured dishes; sidebars on everything from oil to onions provide insight and useful tidbits. A "Basics" chapter attempts to further demystify the foundations of bistro cooking (it's built on staples like confit, stock and aioli), and a "Sources" section directs readers to bistro-appropriate tools and specialty foods. Of course, as any chef knows, food is as much about experience, memory and emotion as it is about flavor and presentation. Especially bistro food, Keller says, which retains the "spirit of the original bistro, the spirit of embracing you... restoring you and making you happy." This appealing book promises to do the same. This is definitely my go-to book for impressive recipes. It’s typical french bistro cuisine but the level of difficulty and exactness is what makes each dish outstanding. These are familiar french dishes with full Thomas Keller level attention to detail. If you’re expecting something easier than his French Laundry cookbook, you won’t get that. Try the french onion soup. It’s absolutely the best version you will find.

I'm a fan of Keller's Ad Hoc cookbook and not just as a coffee table book any more - started cooking several of the recipes and they were all fantastic. Beautifully photographed, excellent recipes and Chef Keller's notes, background and color all resonate with me. I'd call this AND the Ad hoc at home a cooking experience and lesson combined with a cookbook. My New Year resolution is to cook through as much of those 2 books of his as I can ...

… not least of all how to roast the perfect chicken… It's so much easier than any other recipe you'll find. Also how to dress a salad properly. Best beet salad (although I do add chèvre). The recipes can be a little involved (with the exception of that roasted chicken that is nearly the first recipe in the book), but I enjoy the lesson. It's just a lot of fun to cook from this book. It's super inspiring. If nothing else, it's a great read. But I betcha can't stay out of the kitchen afterward.

Big and beautifully. This cook book has it all. And, if you adding to you Tomas Keller collection, it matches the same size as his other books. The recipes in here are fantastic and hard to beat. Plan ahead on all of these, as sourcing ingredients and mastering the techniques takes a long time in most cases. Great for any foodie cookie.

This book is beautifully illustrated and has a wide variety of recipes to choose from. Each recipe has a little background info/history which is a nice intro into why the dish is made the way it is, why it tastes better cooking it a certain way, etc. i found the instructions very easy to follow and there is a great reference section in the back that tells you were to get some of the more obscure cooking utensils that are used. I would definitely recommend this to everyone!

This is a wonderful book full of insightful and inspiring text and pictures of Thomas Keller's realm of bistro fare. More than just a cookbook, Keller shares the why's and how's of many classic cooking techniques. Bouchon is not for anyone looking for a simple set of recipe's for weeknight cooking but rather more serious culinarians or those who want to take the time to experience a higher level of culinary excellence. Some of the ingredients may not be readily available to the casual cook. Many of the recipe's have sub-recipe's and advance techniques. Keller does a great job of explaining many of the techniques so you shouldn't feel daunted if you want to dive right in. There is a good section on basics and a section on sources. Beautiful photography and nicely bound.

What can I say ? Thomas Keller is too charming to resist!!!

Expectations for Thomas Keller's new book `Bouchon' are very high, and I firmly believe he has exceeded them. The book sets new standards for the foodie coffee table fare as well as confirming Keller's reputation as one of the country's foremost culinary artists. The book is larger, heavier, and better than his first cookbook on the cuisine of his flagship French Laundry. There are several things that make this an excellent book for all people who love to cook.First, the book is a superior reference work of bistro dishes and how to prepare them. It is certainly not complete, but then I think no cookbook in the world will ever be a complete reference to any subject, as every culinary subject changes daily due to changes in provisions, historical research, and the enormous variety in how even one dish is made from place to place. For example, both `Bouchon' and Tony Bourdain's recent book on bistro recipes from Les Halle has five (5) dishes containing mussels, yet no two are the same dish. For all of the virtues of Bourdain's book, Keller's book is superior as a reference to the overall style of cooking if only because he and his editors rigorously give both French and English names to all dishes.Second, as amazing as it is to say this, lots of dishes in `Bouchon' are actually easy to make. The initial roast chicken recipe is literally not much more complicated than carefully prepping the carcass and sticking it into the oven. Keller does not even baste the beast and it is done within an hour (for a 3-pound bird). And, all this with the cachet of making a Thomas Keller recipe. Almost all the salads and `openers' dishes are equally as simple, as long as you have high quality ingredients.Third, the pantry chapter of recipes is a more complete reference for making stocks and other sauce bases than I have seen anywhere else. My former gold standard for stockmaking recipes was in `The Zuni Café Cookbook' by Judy Rodgers. This is better by giving recipes that are just as good, better written, and a more complete collection of stocks than I have seen anywhere else. The only thing I would possibly add to this chapter would be a recipe for a court bouillon. But, the recipe does appear in the book as a part of the recipe for a shellfish platter. Other sauces such as a mignonette sauce and a cocktail sauce also appear `in situ' along with appropriate dishes with which they are used.Fourth, the book is simply packed with important culinary techniques. Most of these are not the sort of thing which will find their way to the quick tips pages of `Cooks Illustrated' or `Gourmet' as they are not shortcuts, but more painstaking ways to improve what is probably already an excellent dish. One dramatic example is Keller's twist on braising where he segregates his flavoring vegetables at the bottom of the Dutch oven under a layer of cheesecloth before adding the meat and the broth. In this way, it becomes very easy to remove the finished meat from the veg and retrieve the broth with little or no odd floating bits of celery leaf or thyme branch. A more simple technique is the recommendation to transfer finished stock to the filtering device with a ladle rather than simply pouring the stuff into the chinois. The force of the uncontrolled flow will force some unwanted particles into the filtered stock. It is all about little details piled up upon one another, which separates good from great cooking.Fifth, Keller's interpretation of bistro cooking is uncompromising. One dramatic example of this is his claim that America has forgotten how to make a proper quiche, if it ever did know in the first place. The cardinal sin is to make a quiche in a pie pan. This is no surprise, as Julia Child in `Mastering the Art of French Cooking' gives the same warning. What is more surprising is that while most Americans probably use a tart pan with sides of no more than an inch and Child recommends a flan or cake pan with sides up to 11/2 inches, Keller states that you need a 2 inch tall pan to make a proper quiche. A more subtle difference is in his technique for preparing his pate brisee. Virtually every pie crust recipes I have ever seen calls for cutting in butter to leave lentil-sized bits of butter in the mix. Keller insists this is a mistake for a quiche with a wet custard filling, as the pockets of butter create weaknesses in the dough that may break through before the custard filling has firmed up.Although the book contains many simple recipes, there are also many classic recipes such as boeuf bourguignon, which are literally essays in classic French cooking. Tony Bourdain's recipe for boeuf bourguignon requires 10 ingredients and two concise paragraphs to describe the method. Keller's recipe calls for 43 ingredients in 5 different component preparations, not including the veal stock preparation. This recipe is the poster boy for Keller's take on bistro cooking, which is technique and constant refinement by filtering, skimming, and straining. While the authors have been painstaking in translating the professional's practiced eye and nose into English, this cooking is still about constant attention to the state of the dish as it cooks, and of recognizing the right time to move from one stage to the other. It is this dish where if Bourdain did it at the French Laundry his way, he would be fired on the spot. This book is so large that it will probably be unwieldy to cook from in the kitchen. Open, it is large than two of my cutting boards together. Still, I cannot overstate how valuable this book is to someone who loves to cook and to read about cooking.Very highly recommended.

Jeannie has a fantasy that her husband Michael makes love to another woman while she watches. With the addition of Nell this turns into a wonderful birthday present for Michael. Such a great story line had potential, but the author did not develop the characters, lacks the detailed descriptions that make this more than a ten minutes read, and the story is so short and choppy that the eight chapters each need a few more paragraphs to fill them out. asin=B07MYBCX2M

This book has been SO WONDERFUL!!!!!!! I have the second edition from a year ago and it has tons of markings in it. So far, I haven't compared the two editions to see how different they are.I'm so grateful for the tools and mindset that this book gave me. I felt punished every day for over a year. "Why did I have to get this child? I don't want this one. Take him back, please!" I also had terrible postpartum depression at the time, which made everything worse than it already was, plus my son had one of the five worst cases of colic I've ever heard of, and I've heard a LOT of stories of people trying to sympathize but being unable to even imagine the hell we went through in our son's first year.(By the way, we feel like our son's nature contributed to the colic and other first-year problems, which is part of why the book has been able to help. He was persistent and knew exactly what he wanted, but he couldn't express it. His body is irregular but needed some degree of regularity imposed so he would sleep at all. He is very sensitive to how much sleep he gets. He is energetic and intense and could scream for three hours straight without falling asleep. He didn't know how to cope with big emotions in a little body, so he screamed more. But now he is two years old and really a joy.)Now, we have a wonderful, curious, passionate, loving, interesting, smart, adorable little two-year-old.The most helpful things were these:1) The book Healthy Sleep Habits, Happy Child saved our lives first. It got our son sleeping AT ALL and then sleeping on a predictable schedule, which we all desperately needed. After he was rested, we could finally start working on other things.2) Sign language. We started signing before he was even 8 months old, and it helped immensely. Our son is very spirited and knows EXACTLY what he wants. It was absolutely crucial that we were able to communicate with him to figure out what he wanted.3) This book. A) As I was pulling out of my postpartum depression, it was crucial that I reframe my thinking about my son. I loved the early chapter on using positive labels for our kids - determined instead of inflexible, curious rather than dragging his feet, spirited instead of hellish (yes, I did say that one), energetic instead of drives me crazy, and so forth. B) The chapter on tantrums has helped immensely. He just turned two, which is when many people see tantrums. Not with a spirited child! Anyone with a spirited child knows that the "tantrums" -- the incessant screaming for three hours, the strength of a four year old when your infant hits you in anger -- start at birth. For months, several times a day, I have been using the author's suggestions for tantrums. Not only are her specific strategies helpful (hold him, talk him through it, name the emotions for him, tell him he doesn't have to deal with the emotions on his own) but also the mindset she describes. I don't know how many times I've told myself lines from the book:--"He will be a WONDERFUL adult. This trait is difficult to parent, but it will make a wonderful adult and friend later."--"This isn't a personal attack. He is overwhelmed with his intense emotions and needs me to teach him how to cope. He's not trying to punish me."--"My child is in a spillover tantrum. I don't need to go there, too."--"Stop and think, listen, talk to him. What part of his nature has just been threatened?" C) Feeling less alone was wonderful. I hate it when the old ladies nod their heads and are like, "Yes, kids are difficult," and smile. My grandmas said that until they were around my son for more than two hours straight. Then they said, "Oh my goodness, does he EVER stop moving? No wonder you have him in daycare! You would physically break down and have no energy left if you tried to follow him everywhere." I love reading this book and being like, "No, my kid isn't a freak. He's just more spirited and energetic than most people can imagine, so when they say those trite, idiotic phrases, I can just let it go. They are talking about a different kind of child. My child is like five of their children. I can let it go."All in all, I am SO GRATEFUL that the author wrote this book. It has really saved us.And now, as he is turning two years old, he is better than ever. I promise, it's possible! I LOVE my passionate, intense, loving, curious little guy! He reminds me of myself and his dad (we were both spirited children). Our beginning was absolute hell, but with good tools, including this book, he has gotten better and better. On good days, I can't imagine a more perfect, wonderful child. Mary is right - we ARE the lucky ones! I can't imagine having a dull, uninterested, passive child.Of course, on bad days, I want to drive to my parents' house and leave him there for a week. But we have tools now to work through it, and we're doing alright. Life is so much better now.(p.s. do not feel guilty if you need to put your energetic, social child into daycare. I remind myself, "I take care of myself and do what I need while he's at daycare so that when he gets home, I can be the mom I want to be. Because he is in daycare and I am able to do my self-care, our interactions are positive mostly. If I were watching him at home all day, we would never have a single positive interaction in a day. Daycare supports his curious, energetic, social, sensitive nature.)

I have 2 beautiful, spirited Irish twin boys (ages 5 & 6) that are at constant odds and competition with each other. When one is high the other is low and vis versa. Not only that but they both carry extrovert personalities where I am an introvert. My communication as a single mom was severely broken and I was loosing confidence that I could handle them. Not only that but with 50/50 custody it was difficult to establish routine bc no sooner would it be established then they would return to their dad.Despair sent me to my counselor who recommended this and another book to me for some light reading. Light bulb. I discovered there are more of you out there with beautiful, vibrant, spirited children. The very first chapter helped me develope a different mindset towards their spirit. I had no idea how my own theought contributed so significantly to my tone and response to my boys. First week was tough——they still had meltdowns. Week 2 fewer meltdowns——-week 3 even fewer. After reading further I began using my own humor to lighten up the room when the “yellow” threat zone was beginning. I stopped a meltdown one night at the dinner table by being absolutely silly—-immediately breaking tension and filling the room with laughter. Please read this book. You are not alone. If you are even considering reading something to be a better parent that displays leaps and bounds of at you want for your children. Do it. Read it. So worth it and I’m only on chapter 8.

This book helped me through raising a very spirited child and I often buy a copy to give to people that find themselves in a similar situation as I was. What this book allowed me to do is relax and follow my heart. I was able to put aside what other people thought and just focus on a happy relationship with my child. The biggest help was that it allowed me to assess a situation (such as going into a restaurant meant for kids that could sit still) and say to myself, this is not a situation my child will succeed in and then just say no to the invitation without any guilt. If you find that your life is out of control with your little handful, this book will help you see it from their perspective and adjust your day to day activities to help everyone be successful.

I read this book about a year ago when my daughter was around 1.5 yo and just reread it at 2.5 yo. Some of the techniques and expectation setting (both for you and the child) described in the book have been monumental in us having smooth pleasant days. For example, I didn't even notice until I reread the book, that I'm constantly giving her 5-10, then 2, then 1 minute warnings before we have to go do something new because simply telling her "it's time for lunch" would never work. It was also tremendously helpful to me to read about the fact that many of her "quirks" are pretty normal... for a spirited child :). Great book, completely worth the time and money investment.

After reading just a few pages, it soon becomes obvious why it won awards. However, reading levels and vocabulary have fallen since 1961 when it was published so that most middle school students today will not understand and appreciate the story very well. It's the perfect book to read in English class at the same time students are studying the Roman Empire in History class. There is much useful vocabulary to prepare students for college, as well as many literary devices to discuss, and character development as well. It's a good choice for high school for Christian schools, home schools and students in secular schools writing about books of their choice. Books like this allow a teacher or parent to coordinate history and literature in a unit study.

Elizabeth George Spear is a phenomenal author and this story is wonderful. We read this book aloud to our four kids ages 12 to 5 And the older two children were completely and enraptured with the characters and story line. If you like this book I encourage you to read other books by this timeless author.

Summary:This is the story of Daniel, a young Jewish runaway who's taken up with a band of Zealots and bandits in hopes of driving the hated Romans out of his homeland. When the death of his grandmother forces him to go back home and care for his unhinged sister, he slowly begins to realize how little his carefully honed hatred has done for him, and how little use it is in achieving his ends. As his animosity brings disaster to his friends and destruction to his home, he turns in desperation to the prophet Jesus of Nazareth. My thoughts:Speare's book is well-written, accessible, and full of vitality. The theme of the book - the powerlessness of hatred - is as beautifully depicted here as anywhere, and is portrayed on an excellent level for younger readers (older ones will find that this book dovetails on a thematic level with C.S. Lewis's novel Till We Have Faces). Although this is certainly a Christian work, Jesus is not the main character, and the Christian themes arise organically from the characters themselves. Less satisfying are the statements and actions of Jesus himself. While Speare doesn't quite portray Jesus as an ordinary man, she apparently goes out of her way to avoid phrases like "Son of God" and it's a little unclear whether his miracles are actually miraculous or just the power of personality and suggestion. While this is disappointing and potentially troublesome to an adult reader, it's very unlikely that a reader at the younger end of the spectrum would even notice the inconsistencies. Those passages could even serve as excellent discussion starters.

One of the better fictionalized New Testament stories I've read. In a genre where sometimes the bar isn't set too high, in this book, the characters were well-drawn and interesting. The 1st century setting felt real. The author achieves a real transformation for the main character, Daniel, and it is well-dramatized and affecting. Apparently, this is what would be deemed YA (young adult) category, but I'm an adult and I enjoyed it.

Upon his grandmother’s death, teenaged Daniel returns to the town where he grew up to take care of his demon-possessed sister and take over the blacksmith shop of a friend, Simon, who has become one of Jesus’s disciples. Hoping Jesus is the one to deliver them from the tyranny of the Romans, Daniel and his friends form a group with the bronze bow (from 2 Samuel) as their symbol. The Bronze Bow by Elizabeth George Speare is a wonderful story of what anger and hate can do to us. The setting of first century Galilee and the peripheral character of Jesus Christ works well. I recommend this book to anyone about middle school age and up.

My daughter's Sunday School teacher gave this book to her class as a Christmas present last year, and I recently read it. It was so good that I purchased it for a friend who also enjoys historical Christian fiction. It's very well written, and I learned a lot about the culture of Jesus' day. I think it will give anyone a greater appreciation of the ministry of Jesus, the struggles that the Jewish community experienced under the control of the Romans, and a visualization of the region of Galilee where Jesus spent most of his life an ministry.

Read this myself in middle school and as an adult I still remember how much this impacted me in my youth. Through the point of view of a young boy during the time of Jesus, it was interesting to see how he was influenced even though his life was totally separate and he was going through hard times on top of finding his place in the world. Lots of great core value stuff in here. Got this for my nephew for Christmas but haven't heard yet how he liked it.

The bronze bow is one of those books you hope will go on forever. The message and plot were beautifully constructed with amazing characters easy to get invested in. The setting in Israel during the life of Jesus is great too as the struggle between zealots and legions rage on leaving many suspenseful moments. I recommend the book to anyone around the age of 12-16

#142,508 in Books (See Top 100 in Books)

I collect these There Was An Old Woman Who...books for my granddaughter and I to read together. There are so many ou there and always excited to get a new one. This one however was a bit disappointing. It's not a story at all..it's just a book with a bunch of stickers and pages with scenes on them to put the stickers. I'm still glad we have it in our collection but was bummed there was no story to read!

I was very disappointed with this book since it was not at all what I expected. What I expected was that the child could use the stickers to change the story (i.e., the rhyme) to whatever they thought best. But there is no story or rhyme in the book (although I suppose everyone already knows the "There Was an Old Lady" rhyme) and the stickers have little to do with the story. I guess that's my bad. Nevertheless, I gave it 3 stars because the stickers are cute and my 5 year old grandson just loves to put stickers on everything and 100 stickers will keep him busy for a few minutes at least.

stickers are not peel and paste, so can only use once

Great addition to my classroom library.

This book is very readable. Elementary children boys and girls love it and it's the only book of the series that we have that an insert. It has stickers so cool!

My students absolutely love Lucille Colandro's series of books. They can't wait to see what the Old Lady spits out at the end. Highly recommend getting all of them.

I love it!

Wow! It is for my granddaughter's B-Day. She will love it!!
